The first part, "Mastering the Fundamentals," provides instruction on the arts of steaming and stir-frying; the preparation of rice, panfried, and braised dishes; the proper selection of produce; and the fine arts of chopping and slicing. Part Two, "The Art of Celebration," concentrates on the more elaborate, complex, and meaningful dishes -- such as Shark's Fin Soup and West Lake Duck -- that are usually made with rare ingredients, and sweets such as Water Chestnut Cake and Sesame Balls. The final part, "Achieving Yin-Yang Harmony," explores the many Chinese beliefs about the healing properties of ginseng, gingko nuts, soybeans, dong quai, and the many vegetable and fruit soup preparations that balance and nourish the body. The stories and recipes combine to demonstrate the range of Cantonese cooking, from rich flavors and honored combinations to an overall appreciation of health, well-being, and prosperity.

In addition to the recipes, Young provides a complete glossary of dried herbs, spices, and fresh produce, accompanied by identifying photos and tips on where to purchase them. Unique traditional dishes, such as Savory Rice Tamales and Shrimp Dumplings, are also illustrated step by step, making the book easy to use. The central full-color photo section captures details of New Year's dishes and the Chinese home decorated in celebration, reminding one that these time-honored traditions live on, and the meals and their creation are connections to the past.

Briefly, (and just for background in the hopes that I make sense) I am originally from L.A. My Father was a big time sinophile and subsequently I spent a lot of my formative years in L.A.'s Chinatown. In my father's role as a P.R. man he represented many restaurants ( Quan Bros. Grand Star, General Lee's, Man Fook Low) all of which were Cantonese. As a matter of fact, all of the things that draw me to Chinese culture are Cantonese. From the Kung Fu styles I train in (my Sifu is from Canton) to the food which takes me back the those days with my Father. I have been living outside of California for many years now. Living in cities with no Chinatown, or really no visible Chinese community. There are 3 Chinese restaurants that offer ACTUAL Chinese food....only on Saturday and Sunday! I have just finished reading "The Wisdom of the Chinese Kitchen"The Wisdom of the Chinese Kitchen: Classic Family Recipes for Celebration and Healing. Thank you. You have allowed me to know things I have wondered about for years. I can't wait to cook these dishes. You have added something to mine that is very precious...I am grateful.

I had concerns about not knowing how to replicate my family's recipes, so I am so happy to find a cookbook that documented real Chinese home cooking. I just got this book and have made over 20 dishes from steamed meats, soups, special occasion rice, and stir frys. It's everyday cooking, all easy, and taste just like Mom and Grandmas cooking! The book has beautiful color photos and especially helpful are those of ingredients needed for many of the recipes. Grace Young has definitely put her heart and soul into this book and it is obvious that she comes from a family of great chefs. This book is sooo good, you wont be disappointed.

I got married into a lovely Chinese family where everyone cooks authentic homemade Chinese recipes. This book guides me in making delicious chinese dishes which I proudly present to my in-laws during our family potlucks. Highly recommended!

It is exactly a the book I have been looking for. I am Chinese like the author and I was not fortunate enough to learn from my mother while she was still alive. Now I have some same recipes from this book that I loved and can pass on to my daughter. Thank you.
